Scrambled Eggs with Feta Cheese

3 tablespoons of butter
10 large eggs, beaten
Freshly ground black pepper to taste
1/2 pound of feta cheese, crumbled
1 tablespoon of chopped fresh parsley
In a large omelets pan or nonstick skillet, melt the butter over low heat, then add the eggs and pepper.
When the eggs have just begun to set, sprinkle on the feta and slowly but steadily stir with a wooden spoon until the eggs are softly scrambled and the cheese has almost melted.
Transfer to a heated serving bowl and serve immediately.
Makes 4 to 6 servings
