    1/4 C Chopped Green Pepper
    1/4 C Chopped Green Onions With Tops -- Finely Chopped
    6 eggs
    1/4 C Skim Milk
    1/8 Tsp. Pepper
    1/8 Tsp. Hot Sauce
    1/2 C Chopped Tomato
    1/4 Cup Cheddar Cheese
    Pimiento - optional

    Recipe



    Coat a large skillet with cooking spray; place over medium-low
    heat until hot. Add green pepper and onions; cook until vegetables
    are tender, stirring occasionally. Drain and set aside.

    Combine eggs, milk, pepper and hot sauce; beat well and pour into
    skillet. cook over low heat, stirring gently to allow uncooked
    portions to flow underneath. cook until eggs are set but still
    moist. Stir in vegetables and tomato and cook until thoroughly
    heated. Sprinkle with cheese. Garnish with pimiento and parsley
    if desired.
