    Olive Oil Pastry Crust: Makes two shallow pie crusts

    2 2/3 cups flour
    2/3 cup olive oil (if the sun-dried tomatoes in filling are packed in olive oil, you can use some oil from those)
    1 teaspoon salt
    2 tablespoons cold water

    Mix flour, oil and salt in bowl until all flour is moistened. Sprinkle with water, one tablespoon at a time. Toss with fork until all water is absorbed. Press in bottoms of two 9-inch pie pans. You might like to use a tablespoon to press down the dough once you’ve distributed the crust mixture.

    FILLING:

    1 Pkg. frozen chopped spinach
    3 eggs
    16 ounce container ricotta cheese or blend of ricotta and cottage cheese
    1/2 cup grated cheddar cheese
    1/2 cup grated jack cheese
    1/2 cup feta cheese
    1/4 cup parmesan cheese
    1/4 - 1/2 cup milk
    1/2 cup sun-dried tomatoes, chopped
    2 tablespoons oregano leaves
    2 tablespoons bacon bits

    Combine ingredients, pour into pie crusts, bake at 350 degrees for about an hour or until done.


    Makes two 9 inch pie quiches
