    1 9 inch pie shells
    1/2 pound bulk sausage
    1/4 cup green onion -- chopped
    10 ounces frozen chopped spinach -- cooked and drained
    1/2 cup herb stuffing mix
    1 1/2 cups monterey jack cheese -- shredded
    3 eggs -- mixed
    1 cup half and half cream
    2 tablespoons parmesan cheese
    paprika

    Recipe



    In a skillet cook the sausage, green onion, and garlic; drain. Add the spinach and the stuffing mix.

    Sprinkle the Monterey jack cheese, then the sausage mixture, into the shell.

    In a bowl, combine the eggs and half and half; pour over the sausage.

    Bake in a 375º for 30 minutes. Sprinkle with Parmesan and paprika.

    Bake 15 minutes longer or until a knife inserted in the center comes out clean.

    Let stand 10 minutes before cutting and serving.
