    Spinach and Cottage Cheese Quiche

    1 unbaked pie crust (this can be
    served hot or cold)
    1 (8 oz.) frozen spinach
    8 oz. cottage cheese
    2 eggs plus 1 egg yolk
    2 oz. Parmesan cheese, grated
    4 tbsp. skimmed milk
    1 garlic clove, crushed
    Salt & pepper

    Cook spinach as directed. Remove from heat, drain and cool. Beat together the cottage cheese, eggs, egg yolk and skimmed milk. Add garlic, salt and pepper to tate; stir in the spinach, mix well. Pour into pie crust and sprinkle with Parmesan cheese. Bake in preheated 350 degree oven until golden brown.
