    1 lb. browned, crumbled, and well drained 'hot' sausage
    6 slices of Pepperidge Farms 'Farmhouse' Sourdough Bread
    1 10-oz. pkg thawed chopped and well-drained spinach
    1 lb. shredded Sharp Cheddar cheese
    8 eggs
    1 1/2 cups of half-and-half
    salt, pepper, garlic powder, Italian seasoning to taste

    Butter a 9 or 10 inch square baking dish. Butter the slices of bread. Fit 3 slices of the bread into the dish, butter side up, trimming to fit. Layer as follows: half of the sausage, then half the spinach, sprinkle liberally with each of the seasonings, then top with half of the cheese. Follow with remaining 3 slices of bread - buttered side down, and repeat all layers as above, ending with the cheese. In separate bowl, whisk eggs with half-and-half, and pour slowly and carefully over the strata - make sure to saturate all areas. Cover with foil, and refrigerate overnight. Preheat oven to 350 degrees. Bake strata, uncovered, for 1 hour or until risen, puffed, and nicely browned. Serves 8.

    *If your guests prefer less spicy foods, substituting sage flavored sausage, and adding some extra sage to the spices, also yields a lovely and tasty strata!
