3 pounds chicken breasts -- cut up as for carnitas)
1 teaspoon oregano
3 cloves garlic
1/2 cup rum
lemon (lime) juice
1 cup flour
salt and pepper
1/4 cup oil
Marinate the chicken breasts or pork chunks in rum or brandy and spices for 1/2 hour. Dredge in flour and then fry in hot oil until done.
