Apricot Filled Bar Style Cookies
3 cups all purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 cup butter
2 eggs
2 teaspoons vanilla
Recipe
Mix dry ingredients. Cut in the butter. Beat in eggs and vanilla. Place 2/3 dough in a lightly greased jelly roll pan and spread evenly. Spread apricot preserves (or rosehip jam or your favorite preserves) evenly over the dough. Roll out the remaining dough on lightly floured surface. Cut into strips and criss cross strips over the top of the preserves. Bake in 325 degree oven for approximately 30 minutes or until you can tell it is done. Sprinkle with powdered sugar and cut into squares.
