1 chicken, cut into pieces
1 tablespoon oil
1 onion, chopped
2 cloves garlic, chopped
1 fresh pineapple, cut in 1-inch chunks, or 1 (20-ounce) can juice-pack pineapple chunks
1/2 cup dry sherry
2 tablespoons vinegar
1/2 teaspoon cinnamon
1/4 teaspoon cloves
pepper
2 tomatoes, chopped
In a Dutch oven, brown chicken in oil. Remove. Add onions and garlic to the pan and sauté until soft. Return chicken to the pan. Mix in remaining ingredients except tomatoes. Bring to a boil, then simmer, covered, 20 minutes. Add tomatoes. Simmer, uncovered, until chicken is cooked through, about 20 minutes longer.
Serve with rice. Recipe
