Spinach and Macaroni Casserole
List of Ingredients
2 (10 oz) pkg frozen spinach defrosted and drained, or 2 lb fresh spinach washed and cut finely
1 cup elbow macaroni
6 eggs
4 oz cottage cheese
1/4 cup feta cheese crumbled (optional)
1 cup grated Parmesan or Romano cheese
1 tsp salt
1 tsp baking powder (optional)
Prepare spinach and drain well. Cook macaroni as directed on label.
Beat eggs well, then mix with cottage cheese, feta Parmesan cheese, baking powder and salt in large bowl and mix well.
Place in greased and heated 9x9 inch backing dish and bake in preheated 400 degrees oven approximately 25 minutes.
