1-1/2 pounds sole filets
2 tablespoons butter
1/4 cup onion, minced
1/4 cup mushrooms, sliced
1/2 cup chicken broth
1/2 cup heavy cream
3 tablespoons grated parmesan cheese
1 ounce slivered almonds (about 1/4 cup)
Recipe
Preheat oven to 375 F. Place filets in a greased, shallow baking dish. Saut� the onions and mushrooms in the butter over medium heat until softened. Add broth and cream; bring just to a boil. Pour vegetables and sauce over fillets in pan; sprinkle cheese and almonds over all. Bake uncovered, for 20 to 25 minutes, until fish flakes easily with a fork. Serves four.
