    4 pounds of fresh catfish
    Salt and pepper to season
    1/4 cup of bacon drippings or lard
    The juice from 1 lemon
    1/4 cup of chopped parsley

    Clean and skin catfish and pat dry. Sprinkle with salt and pepper. Saut� in hot bacon drippings over moderate heat until browned on both sides. drain the fish on paper towels and place on a hot serving dish. Sprinkle with lemon juice and parsley. Makes 4 servings
