Bass with Soy/Ginger Sauce

2 lb. bass
1 scallion cut into shreds
2 slices fresh ginger, peeled and julienned
1 c. soy sauce
2 tbsp. vegetable oil
Recipe
Using a bamboo steamer, bring water to a boil. Slice the flesh of the bass in three diagonal cuts on each side of the fish. Place on a heat proof serving plate that will fit in your steamer basket. Put in the steamer, cover and cook for 20 minutes. Meanwhile, combine soy sauce and fresh ginger shreds in a dipping bowl. When the fish is cooked, sprinkle with remaining ginger shreds and scallion shreds. In a small saucepan, heat the vegetable oil until very hot but not smoking. Carefully pour over the fish. Serve immediately.
