Beer Batter Fish

List of Ingredients
1 pound fish fillets
1/2 C. Mix (see below)
1/3 C. lemon juice
2/3 C. beer
1 C. vegetable oil
Mix:
1-1/2 C. unsifted flour
2-1/4 tsp. baking powder
3/4 tsp. baking soda
1-1/2 tsp. tsp. salt.
Recipe
Place fish on paper towels; pat dry. Coat fish with 1/2 C. Mix. In large bowl, combine remaining mixture, lemon juice, and beer (this will foam). Stir until consistency of pancake batter. In large skillet, heat oil over medium heat. dip fish into batter; fry until golden brown on both sides. drain on paper towels.
