    Breaded Oven-Baked Fish

    1 teaspoon oil
    1 1/2 pounds mild-flavored fish, such as orange roughy, mahi mahi, cod, etc.
    1 large egg
    1 tablespoon water
    3 slices low-carb bread, made into dry crumbs (This nutritional analysis based on bread with 6 carbs per 1-ounce slice)
    1/4 teaspoon lemon pepper
    1 tablespoon chopped fresh parsley (or 1 teaspoon dried)
    1 tablespoon melted butter

    Recipe



    Preheat oven 400 degrees F. Lightly oil a shallow baking pan. Rinse fish and pat dry. In a small bowl, beat egg with water. Dip fish in egg, then roll in crumbs. Arrange breaded fish in baking pan.

    Sprinkle with lemon pepper and parsley; drizzle melted butter over all. Bake (uncovered) 20 to 40 minutes (depending on thickness) until done (fish should flake easily and be completely opaque). Serve with low-carb tartar sauce or fish sauce for dipping. Makes four servings.

    Reduced-Carb Tartar Sauce:
    1 cup mayonnaise
    2 teaspoons lemon juice
    2 tablespoons dill relish
    1 tablespoon granular Splenda

    Simply whisk ingredients together. Makes eight servings.

    Low-Carb Dipping Sauce for Fish:
    1/2 cup canned tomato sauce
    1/3 cup regular mayonnaise
    2 tablespoons prepared horseradish
    1 tablespoon fresh lemon juice
    2 tablespoons granular Splenda

    Simply whisk ingredients together. Makes eight servings.
