3/4 pounds of bay or sea scallops
2 tbsp yellow cornmeal
2 tbsp unseasoned breadcrumbs
2 tbsp all-purpose flour
1 tsp Cajun seasoning (to taste)
1 tsp salt
Recipe
Combine scallops and dry ingredients. Melt 2 tbsp of butter in 2 tbsp of oil. Fry until golden brown turning as necessary.
