    1 kg (2 lb) squid, thoroughly cleaned and skinned
    1 cup olive oil
    1 large clove garlic, crushed
    salt and pepper
    1/2 teaspoon dried mixed dill and basil or oregano
    1 cup sauterne
    500 g (1 lb) ripe tomatoes or 1 can tomatoes, drained
    2 teaspoons chopped parsley
    small squares breadfried in olive oil for croutons

    Wash squid, pat dry and cut into rings.
    Heat oil in a heavy frying pan or saucepan, add garlic and cook for about 2 minutes. Then discard the garlic; otherwise it will mask the real flavour of the squid.
    Fry squid in the oil for about 3 minutes or until transparent. Season with salt and pepper (freshly ground for better flavour), add herbs and cook slowly for another 3 minutes.
    Add tomatoes, parsley and sauterne, put lid pan on and simmer for a further 4 minutes.
    Have hot plates ready and serve squid with fried bread croutons.

    Serves 4-6
