    6 ea. U-12 Head-On Shrimp
    4 oz Sliced Andouille Sausage
    1 oz Sliced Shallots
    4 oz White Wine
    12 oz Clam Juice
    2 oz Unsalted Butter
    1/2 oz Shaved Green Onions
    1 oz Diced Tomatoes
    4 oz *Cooked Grits

    Grits:
    2 C Whole Milk
    3 T Butter
    1/2 C Grits
    3 T Salt

    Method for Grits:
    � Bring Milk, Salt and Butter to a boil.
    � Add grits.
    � Cook on low heat until desired consistency.

    � In a saut� pan, saut� the shrimp.
    � Add the shallots and andouille sausage.
    � Cook until the shallots soften.
    � Add the white wine and reduce by half.
    � Add the clam juice and reduce by half.
    � Add the butter and whisk into broth.
    � Add the scallions and tomatoes.
    � Place grits in center of bowl.
    � Arrange shrimp around grits.
    � Check seasoning and add salt and pepper to taste.
    � Pour remaining ingredients over grits.
