    2 cups (1 1/4 pound cooked, flaked catfish
    1 cup cold mashed potatoes
    1/4 cup minced onion
    2 teaspoons lemon juice
    2 eggs, beaten
    1/2 teaspoon salt
    1/2 cup flour
    1/2 cup oil

    Recipe



    Combine first 7 ingredients; mix well. Shape into patties; dredge in flour.

    Fry fish cakes in hot oil about 10 minutes or until golden brown., turning once; drain well. Serve with cocktail sauce.

    Note; If you don't have leftover fish. Boil catfish in water just to cover; until tender.
