1 tsp olive oil
1/2 pat butter or margarine
1/4 cup chopped zuchini
2 mushrooms, sliced
1 clove garlic, pressed or minced
2-3" square of cod (or other flaky fish)
salt and pepper to taste
Recipe
In a wok or skillet, melt the butter in the olive oil. Add the zuchini and saute for 3-4 minutes, or until softened. Add the mushroom slices and garlic, stir, and saute for 2 minutes. Make a clearing in the center of the pan to place the fish - make sure the fish is sitting directly on the pan. Cover the fish with the sauteed veggies and let brown for 2-3 minutes. Turn the fish over, browning the other side for 2 minutes. Cover the pan, turn off the heat, and let sit for 6-8 minutes, or until done. Salt & pepper to taste.
