    Crab Cakes with Remoulade Sauce

    3 Tbsp minced shallots
    1 Tbsp vegetable oil
    1 lb cleaned Crab
    1/3 Cup mayonnaise
    1 egg, beaten
    1 1/2 Tbsp (grained) Mustard
    2/3 Tbsp chopped fresh parsley
    2 Tbsp minced fresh chives
    1/4 tsp Tabasco Sauce
    1/3 Cup cracker crumbs
    salt and pepper

    Sweat shallots in oil. Cool and reserve. Clean shells from crabmeat. Combine all ingredients except crab and cracker crumbs. Fold mixture into crabmeat without shredding. Fold in cracker crumbs. Portion, sauté and serve.


    Remoulade Sauce
    2 Cups mayonnaise
    1 Tbsp capers, chopped
    3 Tbsp red onion
    2 Tbsp cornichons
    Cajun spice
    1 Tbsp garlic
    2 Tbsp lemon juice

    Combine all ingredients and mix well.
