    2 lb. fresh Wild King Salmon filet, skin on and de-boned (cut into four servings)
    1 tsp. salt and cracked pepper mixture
    1 tbsp. olive oil

    Recipe



    Rub salt and pepper mixture onto the salmon and set aside. Preheat saute pan until it begins to smoke. Add olive oil into heated saute pan. Place salmon skin side down into the pan. Cook until skin is crispy (approx. two minutes). Turn salmon over and continue to cook for another two minutes, or to desired doneness.

    Wild Strawberry Cracked Pepper Relish:
    15 fresh strawberries cleaned and pat dry, then cut into 1/8 wedges
    1 tbsp. plus additional ½ c. granulated sugar
    1 tsp. salt
    ¾ tbsp. freshly cracked pepper mix
    8 large leaves sweet basil julienne
    8 large leaves mint julienne
    1/3 c. aged balsamic vinegar
    1/6 c. raspberry vinegar
    1 tsp. of lemon mosto oil

    Place strawberries in a non-reactive mixing bowl. Sprinkle 1 tablespoon of sugar and gently toss. Set aside for 20 minutes at room temperature. Add remaining ingredients and mix well. Taste for adjustments.
