Grilled Sea Bass with Poached Zucchini

8 oz. sea bass filet
1 medium sized zucchini
½ c. carrot juice
½ c. mashed potatoes
1 twig rosemary
1 twig Italian parsley
½tsp. cayenne pepper
1 tbsp. butter
1 tbsp. corn starch
salt and pepper to taste
Recipe
Grill fish until it is at 120 degrees F internal temp. Cook carrot juice in a small pot until it comes to a simmer. Add cornstarch mixed with water to the sauce and wait until it thickens to a light sauce consistency and finish with butter by stirring it in the sauce. Salt and pepper to taste. Slice zucchini into 1/8" thick and poach it in boiling water seasoned with salt for 2 minutes and remove from water. Place mashed potatoes in the middle of the plate and make a circle with the sliced zucchini around the mashed potatoes. Carefully place the fish atop the mashed potatoes and then add the sauce on the outside circle of the zucchini circumference. Garnish with herb twigs.
