Grouper with Pistachio Relish

2 cups peeled whole pistachios
2 cups packed fresh cilantro
¾ cup olive oil
48 oz. grouper
2 cloves garlic
1 tsp. ground green cardamom pods
½ cup lemon juice
Kosher salt and black pepper to taste
Recipe
Mix all ingredients except olive oil in a food processor and pulse until a chunky relish is made. Add oil slowly while processing on high, until a paste consistency is achieved. Rub fish or chicken generously with relish and bake until fish or chicken are done. Serves 6
