Lemon-Dill Cod

11/2 pounds any mild fish, such as cod, haddock, sole, etc.
2 tablespoons lemon juice
1 teaspoon grated lemon peel
2 teaspoons Old Bay Seasoning (may substitute other spices as desired)
3/4 cup grated Parmesan cheese (much better when freshly grated from a block, and not simply poured from a can)
1/2 cup softened butter
1/4 cup mayonnaise
3 stalks green onion, sliced (including green portions)
1 tablespoon fresh dill weed, minced (may substitute 1 teaspoon dried)
Recipe
Preheat oven to 400 degrees F. Grease or oil a large shallow baking pan. Place the fish in the pan in a single layer and sprinkle with lemon juice, lemon peel, and seasoning spice. Cover dish and bake for 20 to 45 minutes (depending on thickness) until done (fish should flake easily and be completely opaque).
Remove fish from oven; drain off pan juices; discard. Change oven setting from "bake" to "broil."
Form a paste with the butter, mayonnaise, green onions, cheese and dill. Spread evenly over tops of cooked fillets and place under broiler for five minutes or so, until golden brown.
Serve immediately. Sliced lemon and additional fresh dill makes a lovely garnish. Makes four servings
