Lobster And Crab Tostada Tower

List of Ingredients
1/2 pound lobster meat
1/4 pound Blue Crab meat (lump)
1/4 cup sour cream
Zest of 3 lemons
1/8 cup chopped chives
Salt and pepper to taste
Gently fold all ingredients together. Reserve.
Lime Spiced Salsa Verde:
10 each medium-size tomatillos
1/4 cup chopped cilantro
1 teaspoon Mexican oregano
2 cloves garlic
Juice of 3 limes
1 Serrano chile, chopped
Puree all ingredients in a blender.
Assembly:
Assemble Tower using 3 rounds of flour tortillas cut out using a water glass or biscuit cutter. Fry until crispy. Alternate layers of tortilla and Lobster Salad (3 layers). Top with a tablespoon of guacamole. Garnish plate with Salsa Verde, fresh sliced tomato and roasted corn. (To roast corn, place 1 cob onto a baking sheet, rub with oil and bake at 400 degrees until lightly colored. Cool and cut off cob.)
