6 tablespoons butter
1 pound frozen, peeled, tail-off shrimp
1 tablespoon lemon juice
1/2 teaspoon salt
Pinch red cayenne pepper (or dash hot pepper sauce)
3 ounces cream cheese, in one-inch chunks
2 tablespoons grated parmesan cheese Recipe
Melt butter over medium-high heat. Add frozen shrimp, cover, and cook, stirring occasionally, until shrimp are pink. Add lemon juice, salt, pepper, and cream cheese; continue to cook, stirring constantly, until cream cheese melts and sauce is smooth. Serves four.
