List of Ingredients
Four 4 ounce frozen lobster tails
1/4 cup of consommé
1 small onion, chopped
1/2 pound of mushrooms, trimmed and sliced
1/3 cup of dry sherry
2 Tablespoons of cornstarch
1 egg yolk
1 1/2 cup of milk
1/2 teaspoon of dry mustard
1/4 teaspoon of Tabasco sauce
1 teaspoon of paprika

Drop the frozen rock lobster tails into boiling salted water. when water reboils, parboil for 2 minutes. Drain and drench with cold water. With scissors, remove the underside membrane and pull out the meat in one piece. Dice meat, reserving shells for serving. In a saucepan, heat consommé and add onion and mushrooms. Stir over low heat until the vegetables are tender. In a bowl, mix the sherry, cornstarch and egg yolk. Add milk to vegetables and stir in cornstarch mixture. Add dry mustard, Tabasco sauce and paprika. Stir over low heat until sauce bubbles and thickens. Add lobster and season to taste with salt. Use mixture to stuff reserved shells. Place under broiler and broil for 5 minutes or until bubbly.
