Sheepshead Bay Crabmeat Casserole

2 eggs
2 cups milk
2 cups seasoned croutons
1/2 pound cheddar cheese, grated
1 Tbsp onion finely minced
1 Tbsp parsley finely minced
salt and pepper to taste
1 pound lump crabmeat, picked over
Parmesan cheese, freshly grated
Beat eggs. Mix in all other ingredients except the Parmesan cheese. Pour into a greased shallow casserole. Top with a sprinkling of Parmesan cheese.
Bake at 325F for an hour or until knife inserted in center comes out clean.
