    Shrimp-Artichoke In Garlic Tomato Sauce

    1 tablespoon olive oil
    8 scallions, chopped
    2 cloves garlic, minced
    1 tablespoon jalapeno pepper, finely chopped (optional)
    1 pound cooked shrimp, shelled and deveined
    14 ounces canned artichoke hearts, drained and quartered
    30 ounces canned diced garlic flavored tomatoes
    1/2 cup fresh cilantro, finely chopped
    1/2 cup vegetable or chicken broth, optional
    salt and freshly ground pepper to taste

    In a large skillet, heat oil. Add scallions, garlic, peppers, and shrimp. Cook 3 minutes over medium heat. Add artichoke hearts, tomatoes, and cilantro. Bring to a boil. Reduce heat and simmer for 15 - 30 minutes or until it reaches desired consistency. Add vegetable or chicken broth to thin if needed. Add salt and pepper to taste. Serve over warm pasta.

    Note: Fresh basil may be substituted for the fresh cilantro if desired.
