    Shrimp Scampi on Angel Hair Pasta

    1 pound fully cooked peeled and deveined medium shrimp, about 50 to the pound
    6 tablespoons butter
    1/2 cup olive oil
    1 tablespoon minced garlic
    A pinch of mustard seed
    Juice of 1/2 lemon
    1 cup chopped fresh parsley, divided
    8 ounces angel hair pasta
    Put 3 quarts of water on to boil.

    Thaw shrimp by running under warm water in a colander for about 2 minutes.
    Melt butter and warm olive oil together in a large skillet over medium high heat. Stir in garlic and mustard. Saute just until aroma develops. Add in shrimp, tossing occasionally to cook and glaze on all sides, about 6 or 7 minutes.
    Squeeze juice of half lemon into mixture. Toss in about 3/4 cup of the parsley and cook just until wilted. Remove from heat.
    In the meantime, add pasta to boiling water and cook until just tender, about 4 minutes.
    Drain and rinse quickly under hot water, shaking to remove excess moisture. Toss cooked pasta into skillet with shrimp mixture.
    Toss together to mix, scraping bottom to remove any browned bits.
    Remove to a big serving bowl, sprinkle with remaining parsley and serve immediately.
