Thai Steamed White Fish w/Garlic, Chili

White fish (ideally Halibut but works well with Haddock, Sole, Cod as well)
3 tbsp freshly squeezed lime juice
2 tbsp fish sauce
1 tsp sugar
3 tsp chopped garlic
3 tsp chopped green onion
1 tsp fresh jalapeno peppers
Recipe
1. Set up steamer with water. Bring to a rolling boil.
2. Rinse fish in cold water then place in steamer.
3. Reduce water to medium heat and steam for approximately 12 minutes or until
fish flakes when touched with fork.
4. While fish is steaming, mix together lime juice, fish sauce and sugar in a
small bowl. Combine the garlic, green onion, and chili in another bowl.
5. When the fish is done, carefully remove from the steamer and place on
plates.
6. Spread the garlic/chili mixture over the fish then pour the lime juice mixture over it and serve at once.
Best served with rice and green vegetables.
