Maple Mocha Topping

2 egg whites
2 teaspoons instant coffee granules
1/2 teaspoon vanilla
1/4 cup sugar
3/4 cup maple syrup
In a glass bowl, beat egg whites until stiff. Add remaining ingredients, and beat until thickened. Serve over ice cream or angel food cake.
Note: This recipe contains uncooked egg whites. If pasteurized egg whites are not used, it should not be served to high-risk groups, such as the very young, the very old and people with weakened immune systems.
