2 cups Cider or Apple Juice
1 cup water
1/8 teaspoon barley malt sweetener
thinly julienned lime rind
Combine all ingredients in a bowl, place in the freezer and leave for 2 to 3 hours, until the liquid has frozen solid. Remove from freezer and break up into large chunks with a fork. Transfer to a food processor and process with the metal blade until smooth and creamy. Return to bowl and freeze at least 30 minutes more. Serve in chilled goblets garnished with lime rind. Serves four. 55 calories per serving.
