    Chewy Coconut Almond Cookies

    1 C. shredded coconut
    1/2 C. sliced toasted almonds*
    1/2 C. packed dark brown sugar
    1 C. buttermilk biscuit baking mix
    1/2 C. packed light brown sugar
    1 C. buttermilk biscuit baking mix
    * Toast the almonds in a microwave for 1-5 minutes,
    stirring every minute.

    Use a one quart, wide-mouth canning jar. Pack each layer.
    To the jar add the coconut, the almonds, the dark brown
    sugar, one cup of buttermilk baking mix, the light brown
    sugar, and the other cup of biscuit baking mix. Add more
    almonds if there is any space left. Seal and decorate jar,
    and attach the recipe tag to the jar.

    Chewy Coconut Almond Cookies
    You will need:
    1 cup of butter, melted
    1 egg
    1 tsp. vanilla
    large bowl


    Pour the contents of the jar in a large bowl. Add the butter,
    egg and vanilla, mixing the ingredients well. Roll into 1" balls
    and drop them onto a greased cookie sheet. Bake at 375 degrees
    F. for 10-12 minutes or until lightly golden.
