    Baked Stuffed Plum Tomatoes

    2 plum tomatoes, cut in half lengthwise
    1/2 clove garlic, minced
    1 green onion, finely chopped
    1/4 cup basil, chopped
    1/4 cup spinach, chopped
    1/2 cup ricotta cheese
    salt and freshly ground black pepper
    olive oil
    1 1/2 tbsp. pine nuts

    Scoop out the center of the tomato halves. In a bowl mix together the garlic, green onion, basil, spinach, ricotta and salt and pepper. Stuff the mixture into the tomato shells.

    Oil a baking sheet well and place the stuffed tomatoes on it. Sprinkle with the pine nuts.

    Bake on a low rack in an oven set at 375F for 20-25 minutes watching to see that the pine nuts do not become too brown.
