Beef Fillets with Mozzarella

4 individual loin tenderloin steaks (fillet), cut 1/2-inch thick
2 tablespoons butter salt and ground pepper
2 tomatoes
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1 teaspoon oregano
4 slices Mozzarella
Recipe
Preheat oven to 375.
In a large skillet sear meat briefly on both sides in very hot butter. Season with salt and pepper and remove to shallow baking dish. Top each fillet of beef with tomato half, cut side up.
Combine parsley, garlic and oregano and sprinkle over tomatoes. Top each with a slice of mozzarella.
Bake only until cheese melts. Serve immediately.
