    Bruschetta with Peppers & Mozarella

    4 roasted bell peppers, peeled, seeded and sliced (about 2 cups)
    2 Tbsp. finely chopped fresh basil
    1 Tbsp. balsamic vinegar
    salt and pepper to taste
    8 1/2 thick slices Italian or French bread.
    1 clove garlic, peeled and cut in half
    2 oz. fresh mozarella, cut into strips
    2 tsp. extra-virgin olive oil

    Recipe



    Preheat the broiler. In a medium bowl, combine peppers, basil and vinegar. Season with salt and pepper. Rub both sides of the bread with the cut sides of the garlic. Place bread on a baking sheet; top with roasted peppers. Lay mozarella over the peppers and drizzle with olive oil. Broil brushetta, 6 inches from the heat source until cheese melts and starts to brown. Serve hot. Great for appetizer or with soup and salad. Simply delicious.
