    1 Large Eggplant, peeled and sliced
    1 Egg Beaten
    2 Tbsps. Water
    3 Tbsps. Oil
    1 Lb. Ground beef
    2 Medium Onions, chopped
    2 Cans (8 oz. Each) Tomato sauce
    1/4 Tsp. Basil
    1/4 Tsp. Oregano
    1 Tsp. Salt
    1/4 Tsp. Pepper
    1 Clove Garlic, crushed
    1/2 Lb. Mozzarella cheese, sliced

    Recipe



    Dip eggplant slices in mixture of water and egg. Sauté in oil. Cook beef and onion until golden. Add tomato sauce and seasonings. Layer meat sauce, eggplant, and cheese in a two quart casserole ending with cheese. Bake at 350° for 40 minutes.
