Eggplant Cheese Casserole

1 Large Eggplant, peeled and sliced
1 Egg Beaten
2 Tbsps. Water
3 Tbsps. Oil
1 Lb. Ground beef
2 Medium Onions, chopped
2 Cans (8 oz. Each) Tomato sauce
1/4 Tsp. Basil
1/4 Tsp. Oregano
1 Tsp. Salt
1/4 Tsp. Pepper
1 Clove Garlic, crushed
1/2 Lb. Mozzarella cheese, sliced
Recipe
Dip eggplant slices in mixture of water and egg. Saut� in oil. Cook beef and onion until golden. Add tomato sauce and seasonings. Layer meat sauce, eggplant, and cheese in a two quart casserole ending with cheese. Bake at 350� for 40 minutes.
