    Frank Sinatra's Pasta Tortellini Salad

    Makes 8 servings

    18 ounces, cheese tortellini (dry, frozen, or refrigerated)
    1/2 cup pitted black olives, drained and cut in half
    1 8 1/2-ounce jar artichoke hearts, drained and cut into quarters
    1 4 1/2-ounce jar whole mushrooms, drained
    10 cherry tomatoes, cut in half
    1 15-ounce jar Pesto Sauce

    Recipe



    Cook the tortellini according to the package instructions. Combine the pasta, olives, artichoke hearts, mushrooms, and tomatoes. Add the pesto sauce and stir gently until combined. Cover and chill overnight to blend flavors.

    Variation: Substitute 1 pound of your favorite dry pasta for the tortellini. Cook according to package directions. For additional variety, stir in any of the following: sun-dried tomatoes, pepperoni, provolone cheese, dried red or green peppers, roasted red peppers, or chopped green onions.
