    Green Bean Salad with Tomatoes

    1/2 pounds of fresh green beans, ends trimmed
    1 garlic clove, halved
    4 large ripe tomatoes, quartered, seeded and cut into 1/4 inch lengthwise strips
    1/2 medium red onion, thinly sliced
    2 tablespoons of chopped fresh basil (optional)
    2 tablespoons of chopped fresh parsley
    2 tablespoons of olive oil
    2 teaspoons of fresh lemon juice
    1/4 teaspoon of salt
    1/8 teaspoon of freshly ground black pepper

    Fill a large saucepan with water, bring to a boil. Add the green beans, cover and cook until just tender, about 5 minutes. Drain into a colander and rinse with cold water. Rub the inside of a large serving bowl with the cut sides of the garlic. Add the green beans, tomatoes, onion, basil, parsley, olive oil, lemon juice, salt and pepper. Toss and serve. Makes 4 servings
