Garden Pasta Salad
1 12-ounce package of rotelle pasta
1 cup diced zucchini
1 cup seeded and diced red bell peppers
2 cups of fresh green peas or cooked packaged peas
1 cup carrots, grated into large pieces
1 bunch green onions, sliced thinly
1 cup Italian vinaigrette - 3 parts olive oil to 1 part white wine vinegar
1 bunch parsley, minced (optional)
salt
freshly ground white pepper
Prepare the pasta according to package directions. Chill the pasta in a colander under cold running water. Drain well and place in large mixing bowl. Toss all the ingredients together. Adjust seasoning with salt and pepper. Serve immediately or refrigerate. Serves 4.
