1 (8-oz) Can almond paste
1 cup sugar
4 egg whites (at room temperature)
pinch of salt
1 Tbsp. almond extract
1 Tbsp. confectioner's sugar
Recipe
Mash up the almond paste in bowl with fork, adding sugar as you mash. Add 1 egg white and, using an electric mixer, beat until smooth
In a separate bowl, beat 3 egg whites until stiff, but not dry. Add pinch of salt midway in the beating. Add egg whites to sugar and almond paste mixture and continue beating (the batter should be light). Mix in the almond extract.
Butter and flour cookie sheets and drop the batter by half teaspoons (I use a Demitasse spoons for this) leaving 1-1/2 inches between the cookies.
Put confectioner's sugar in a sieve and sprinkle each cookie with bit of it (Important. . this cookie should rest and stand for 1-1/2 hours before baking)
Set oven at 350º, and bake for 20 minutes, or until golden in color (Don't over bake)
Cool before removing from cookie sheets
