    Italian Spice Cookies w/ Lemon Icing

    1 cup raisins
    3 1/4 cups flour
    1/2 tsp. baking soda
    1 tsp. allspice
    1/4 tsp. nutmeg
    1 cup sugar
    2 tsp. vanilla
    1 orange rind, grated
    3 tbsp. orange juice
    1 tsp. baking powder
    1 tsp. cinnamon
    3/4 tsp. ginger
    1 cup butter, softened
    1 egg
    1 lemon rind, grated

    Glaze:
    1 1/2 cups confectioner’s sugar
    4 tbsp. candied fruit, optional
    3 tbsp. lemon juice

    Recipe



    Combine raisins and orange juice. Set aside to plump.

    Beat butter and sugar until creamy. Add the egg, vanilla and lemon and orange rind. Stir in 2 cups of flour, baking powder, baking soda, and spices. Then add raisins and juice. Add remaining flour. Do not overbeat.

    Shape dough into 1” balls. Refrigerate dough briefly if it is too soft. Place balls 1” apart on lightly greased baking sheets. Bake in preheated 350° oven for 7-9 minutes, or until cookies feel nearly firm when gently pressed. Let cookies cool slightly on baking sheet, and then remove to wire racks. Prepare glaze by stirring together confectioner’s sugar and juice until mixture is smooth and thin. Drizzle glaze on the warm cookies, and then lightly press on candied fruit or sprinkles.

    Makes 5 dozen cookies.
