    6 Large eggs
    1 Cup of sifted sugar
    (Select one of the following)

    1 1/2 Teaspoons of vanilla
    Or
    1 Tablespoon of lemon juice and the grated rind from 1/2 lemon
    O r
    1 Tablespoon of orange juice and 1 teaspoon of grated rind from an orange.
    Or
    6 drops of anise extract

    1/4 Teaspoon of salt
    1 1/2 Cups of sifted unbleached flour
    1 1/2 teaspoons of baking powder - can be eliminated to make the cake dense.

    Recipe



    1. Separate the eggs into two large mixing bowls.

    2. Whisk the egg yolks with the sugar until smooth and frothy.

    3. Add the flavoring of choice and the salt and combine.

    4. If using the baking powder sifts it with the flour into a third bowl.

    5. Add the flour to the beaten yolks a little at a time stirring well with each increment.

    6. Beat the egg whites until they are stiff, but not dry.

    7. Fold the egg whites into the yolk mixture gently.

    8. Into a scrubbed 10-inch tube pan place the mixture, avoiding any air pockets.

    9. Bake on the bottom shelf of a 350-degree oven for 45 minutes.

    10. Suspend the pan upside-down for at least 1 1/2 hours.

    11 Cut around the edges of the pan with a sharp thin knife.

    12. Gently jiggle the pan upside-down until the cake falls out of the pan.
