Italian Tomato Salad

List of Ingredients
3 large ripe tomatoes
1 medium onion
1 hot pepper (optional)
a handful of fresh basil leaves, chopped
1/2 tsp of dried oregano
salt to taste
1/2 cup of good olive oil (vegetable can be used in a pinch)
Recipe
Chop tomatoes and pepper, slice onions into thin strips. Add to bowl. Add basil, oregano,and salt. Toss to incorporate the ingredients. Add oil. Toss well.
We usually eat this salad with very hard Italian bread (bene coto) I would include the recipe for that but my mother in law won't give it up. The salad is meant to be eaten with bread to soak up all of the good juice so if you can't find the bene coto then a nice crusty loaf of bread warmed in the oven will do quite well. Also, if chopped fine this salad makes a great bruchetta topping.
