    List of Ingredients




    1 lb.—ground chuck (lean)
    1/2 lb.—pork sausage
    1 bunch—Italian parsley, chopped
    3—medium onions
    6—cloves garlic fresh herbs (rosemary, oregano, thyme)
    1/2—bell pepper, chopped
    1—celery heart (with leaves)
    2 Tbsp.—olive oil
    1/2 cup—good red wine
    1/4 tsp.—each allspice and cloves
    1/2 tsp.—dried oregano
    1 Tbsp.—sugar, rounded
    1/2 cup—dried tomato paste*
    2 quarts—canned whole tomatoes, blended
    1 large can—tomato sauce
    2 1-ounce package—TOMATOES, chopped or crumbled
    1/2 cup—dried mushrooms, soaked and chopped

    Recipe



    Use meat grinder to chop meats, parsley, onion, garlic, fresh herbs, bell pepper and celery heart. Cook ground chuck and pork in olive oil until no longer pink. Add chopped vegetables. Add remaining ingredients and simmer several hours. Enjoy the sauce on spaghetti, ravioli, gnocchi, lasagna "any shape pasta!"

    *Dried Tomato Paste: Puree steamed TOMATOES slices until a paste consistency.
