    Meatballs with Balsamic Tomato Sauce

    1 lb. ground pork
    1 large clove garlic, minced
    1 tsp thyme
    2 Tbsp chopped fresh parsley
    1 egg
    1/4 Cup grated, fresh Parmesan
    2-3 Tbsp dry bread crumbs
    1 tsp salt
    Freshly ground pepper
    Olive oil for frying
    1 tin chopped tomatoes
    1 Tbsp dark brown sugar
    1 Tbsp balsamic vinegar
    Salt and freshly ground pepper

    Mix the ground pork with the minced garlic, thyme, parsley, egg, Parmesan cheese and dry bread crumbs. Season with salt and pepper. Roll the meat mixture into 8 meat balls and fry in olive oil 5-6 minutes on each side over medium heat.

    In a medium saucepan bring the chopped tomatoes, brown sugar, and balsamic vinegar to a boil, reduce heat and simmer for 10 minutes. Season with salt and pepper and serve with the meatballs, green salad and small potatoes.
