Mille Bonazzo Easter Soup

List of Ingredients
3 quarts homemade chicken broth, made in advance
olive oil
3 large eggs
1/4 cup milk
1 teaspoon baking powder
Salt and fresh pepper
Garlic powder
Onion powder
3 Tablespoons Italian parsley, finely chopped
flour
2 eggs, hard boiled and sliced (optional)
Recipe
Heat olive oil in a medium non-stick skillet, using enough oil to coat skillet well. Meanwhile, beat together eggs, milk, and baking powder in a bowl. Add salt, pepper, garlic and onion powder to taste and parsley. Stir well. Add enough flour to form a very thick, but pourable liquid. Pour the mixture into the hot skillet and cook for several minutes, taking care that it does not stick. Turn whole pancake at once and allow to finish cooking. Remove to a plate and allow to cool. Cut pancake into 1/2 inch cubes.
To serve, place a small amount of croutons in each bowl and ladle hot chicken broth over it. Allow guests to add additonal croutons and serve sliced hard boiled eggs as an accompaniment.
