    Mozzarella fritta all romana

    1 lb mozzarella cheese
    flour
    2 eggs, well beaten
    oil for frying
    superfine sugar
    cinnamon

    Slice mozzarella, making slices about 1/2-inch thick and about 1
    1/2-inches square. Coat pieces with flour. Dip in egg and fry in
    a large frying pan with oil. Fry until brown on both sides, about
    3 to 4 minutes. Drain on absorbent paper when pieces are golden
    brown. Arrange on a serving platter and sprinkle generously with
    superfine sugar mixed with a pinch of cinnamon.
